CT 001 – Certificate in Basic Food Preparation and Culinary Arts

Course Description
The Certificate in Basic Food Preparation and Culinary Arts is designed to impart skills and knowledge to candidates in the food production and presentation methods. It will provide a basic introduction to the theory and practical side of food preparation, giving the necessary knowledge and practical experience for candidate to operate in a kitchen environment of any food outlets.

What Skills will be developed in this Qualification?
Candidate will learn the basic skills for food preparation in foodservice areas and the syllabus will cover the following areas;
·         Safety at work and food safety
·         Hygiene and sanitation practices
·         Principles of food preparation
·         Costing and control system
·         Storage and care of materials and equipment
·         Nutrition

CT 002 – Certificate in Food and Beverage Services

Course Description
Certificate in Food and Beverage Services is designed to impart skills and knowledge to candidates who have no previous experience in an operation and servicing of a food outlet. A combination of theoretical and laboratory approach will be used in training candidate to be competent and skilful server in a food and beverage establishment.

CT003- Certificate in Reception Operations

Course Description
Certificate in Reception Operations is designed to impart skills and knowledge to candidates who have no previous experience in an operation of front office in a hospitality establishment. A combination of theoretical and laboratory approach will be used in training candidate to be competent and skilful in providing professional services to their guests and customer.
